Savory Stir-Fried Bean Sprouts with Minced Meat
The secret to a restaurant-quality stir-fry at home is high heat and speed. Bean sprouts cook in a flash, and if you leave them in the pan too long, they lose their signature crunch. By browning your meat first and flash-frying the sprouts at the very end, you get a dish that is vibrant, crunchy, and coated in a glossy, savory sauce.

🛒 The Ingredients
The Main Event:
- 1 lb Fresh Bean Sprouts (Mung bean sprouts work best), rinsed and thoroughly drained
- 1/2 lb Minced Meat (Pork, beef, or chicken all work beautifully)
- 1–2 Green Bell Peppers or Jalapeños, sliced into thin strips
- 3 cloves Garlic, minced
- 1 tbsp Fresh Ginger, minced
- 2 tbsp Cooking Oil (like canola, vegetable, or peanut oil)
The Umami Sauce:
- 2 tbsp Soy Sauce
- 1 tbsp Oyster Sauce
- 1 tsp Dark Soy Sauce (optional, mostly for that rich color)
- 1 tsp Sesame Oil
- 1/2 tsp Sugar
- 1 tsp Chili Flakes or Chili Oil (adjust to your spice preference)
👩🍳 Step-by-Step Instructions
1. Prep is Everything
In stir-frying, things move fast! Mix all your sauce ingredients (soy sauces, oyster sauce, sugar, and chili flakes) in a small bowl. Make sure your bean sprouts are completely dry—excess water will steam them instead of frying them.
2. Brown the Meat
Heat your wok or a large skillet over medium-high heat until it’s smoking hot. Add 1 tablespoon of oil. Toss in your minced meat, breaking it apart with a spatula. Let it sit undisturbed for a minute to get a nice brown crust, then stir-fry until fully cooked. Push the meat to one side of the pan.
3. Sauté the Aromatics
Add the remaining tablespoon of oil to the empty side of the pan. Toss in the minced garlic and ginger. Sauté for about 30 seconds until extremely fragrant, then mix it in with the cooked meat.
4. The Flash Fry
Add the sliced green peppers and the drained bean sprouts to the pan. Turn the heat up to the absolute maximum! Pour your sauce mixture evenly over the vegetables.
5. Toss and Serve
Toss everything together continuously for 1 to 2 minutes. You want the sprouts to just slightly wilt but retain their crispness. Remove from the heat immediately, drizzle with the sesame oil, and serve piping hot over rice.
