- 500g Chicken Thighs, cut into bite-sized pieces
- Keto Glaze: A mixture of soy sauce (or coconut aminos), ginger, garlic, and a keto-friendly brown sugar substitute

The Cauliflower Fried Rice:
- 1 medium head of Cauliflower, grated or processed into “rice”
- 1/2 cup Frozen Peas and Carrots
- 2 Eggs, lightly beaten
- 2 Green Onions, sliced

1. Sear the Chicken
Heat sesame oil in a large skillet over medium-high heat. Add the chicken pieces and cook until they are golden brown and fully cooked through.
2. Glaze to Perfection
Pour the keto glaze over the cooked chicken. Continue to cook for another 2–3 minutes, stirring constantly, until the sauce reduces and becomes thick and sticky, coating every piece of chicken. Remove from the pan and set aside.
3. Sauté the “Rice”
In the same skillet, add a little more oil if needed. Sauté the cauliflower rice along with the peas and carrots until the cauliflower is tender but not mushy.
4. Scramble and Combine
Push the cauliflower mixture to one side of the pan and pour in the beaten eggs. Scramble the eggs until just set, then fold them into the cauliflower rice. Season with a splash of soy sauce.
5. Assemble the Plate
Serve a generous portion of the cauliflower fried rice alongside the sticky sweet chicken. Top with sliced green onions for a fresh finish.
